Puccia is a traditional sandwich originating in Salento, Puglia, (IT) made with pizza dough baked in a wood fired oven and filled with fresh ingredients.
Our flour is ideal for pizza dough for two reasons: one, it is finely ground, and two, it has a lower gluten content that most flours. Gluten free crust is available for an additional charge.
